Deliciously Moist and Fluffy Banana Loaf

On Friday I booked my summer holiday and vowed that the word ‘dessert’ was going to be banned from my vocabulary. 3 days later and I find myself with a freshly baked banana loaf glaring at me from my worktop. However, due to the bananas I’m classing this as as healthy…Okay so it’s probably not ‘healthy‘ but it’s healthier than some desserts, right?! So if you fancy making a deliciously light, fluffy and extremely moist banana loaf then keep reading..


2 ripe bananas
150g golden caster sugar + extra for sprinkling on the top
125g Margarine
60ml Milk
1 1/2 teaspoons vanilla essence
185g self raising flour
1 teaspoon baking powder
1 large egg (beaten)

First, melt the sugar and butter in a saucepan over a low heat. Next, one by one, add the rest of the ingredients, stirring well until a light brown coloured mixture has been formed. Then pour it into your desired dish – for a guidance the one I normally use is 10 by 8 inches and worked perfectly! For a sweet crispy topping I also sprinkle a little bit of sugar over the top of the mixture before placing it in the centre of the oven on gas Mark 3/160C/140C (fan) for approximately 45 minutes. Another way to check it’s ready is if you can place a skewer in the centre and it comes out pretty much clean. It really is that simple!
